Okay, so this one was a BIG experiment!  I wanted delicious, roasted chicken.  But I was feeling lazy.  But not SO lazy that I had to go buy food.  So here’s what I did.

Ingredients:

1 cast iron skillet

¼ cup olive oil

One leek

4 garlic cloves

2 lemons

4 red baby potatoes

1 cup mushrooms

1 head broccoli

¼ apple

3 sprigs rosemary

Salt, pepper, garlic powder

 

 

Step 1: Prepare Your Skillet

Coat the bottom of your skillet in olive oil.  Add in half of sliced leek.  Toss in chopped garlic, chopped mushrooms.  Drizzle the top with olive oil and make sure everything is coated well.  Chop up ¼ apple and toss that on top.  Cut lemons in half and, using one half, squeeze the juice onto the mixture.   Slice the other half into thin circles (save for later).

Step 2: Add your Chicken

Take your chicken breast and nestle it into the pile.

 

Step 3: Dress up your Chicken

Sprinkle the top with remaining sliced leeks. Drizzle with olive oil and rub in a little.  Sprinkle a layer of garlic powder, salt, and pepper on top of the entire dish.  Place rosemary sprigs on top of the platter.  Cut remaining lemon in half and juice it all over the entire dish.  Place the lemon circles on top of the dish as well.  Might need one last drizzle of olive oil

Step 4: Bake it!

Place in a preheated oven (450) for 55 minutes, or until the temperature of the breast is 160 with a meat thermometer (if you don’t have one, BUY one). After 20 minutes, drop down temperature to 375. Add broccoli after 20 minutes (turn oven back up to 450) and cook another 15 minutes until cooked through.

So easy, it hurts.
